In late October, we approached four vehicles parked in the desert. Each tiny truck and 18 year old van contained one elderly man. None of them had cooking facilities and of course, no running water.
They gratefully accepted our offer of a meal, delivered each Thursday. A few days later we cooked 10 meals. We took the meals to the men and asked them about their neighbors. They pointed to half hidden cars and flimsy tents. Again, we approached strangers, offering meals.
Now, each Thursday, we distribute 30 meals.
This coming Thursday is Thanksgiving in the USA. Our previous meals have been one pot recipes based on rice or pasta, richly sauced and filled with vegetables along with chicken or fish. Calorie rich, flavor rich.
We are limited by not having refrigeration or an oven. Still, we want to try to make a special meal for these folks who have fled the homeless scene in the cities to the relative safety of the desert. We were given take-out containers with three compartments. At the moment, we have 6 jars of gravy and 6 boxes of stuffing.
Tomorrow morning, I'm going shopping for two #10 cans of green beans, potatoes, and 20 cans of chicken. I'll get some celery to go in the stuffing. We are hoping to find a volunteer to make the 2 hour drive to Costco for 3 of their huge pumpkin pies.
Yes, the meal is modest, but it will be a welcome change.
